7 Pro Tips for the Best Bakery-Style Cookies
1. Let them set on the tray to firm up.
One of the best ways to get soft, chewy cookies is to take them out once the edges turn golden brown and then allow them to continue baking on the tray for a few extra minutes before transferring them to the cooling rack.
2. Use the secret ingredient.
Many of our cookie recipes use Instant Clearjel or instant pudding mix. Although it may feel like you're cheating to add a boxed ingredient to the cookie dough, it's a way to level up.
The modified corn starch helps absorb extra moisture, keeping your cookies super soft and tender without drying out or becoming too chewy. It also adds an extra layer of flavor!
3. Remember salted butter is your friend.
Most recipes out there call for unsalted butter, but I think that's a mistake. The salted butter brings out so much extra flavor and helps offset the sweetness of your sugar cookie or chocolate chip cookie dough, making it much more balanced and delicious. It won't make your cookies taste too salty either.
If you try only one tip, make it this one. It makes a huge difference!
Top Tip
You really cannot make great cookies without using properly softened butter. Cold butter will not whip up very well, causing your cookies to be dense and overly chewy. Too soft, and they'll fall apart in the oven. The butter should be soft to the touch, but not squishy.
Bonus tip: Use the paddle attachment for the fluffiest butter.
4. Use fresh leavening agents.
It really helps to use fresh baking soda or baking powder and to sift the dry ingredients first to remove any clumps.
5. Use good quality ingredients.
Like pure vanilla extract, dark chocolate chips, dark cocoa powder, and more. It's worth the extra cost to get the good stuff!
6. Measure properly.
It's very easy to add too much flour to your recipe and end up with dry, crumbly cookies instead of soft, melt-in-your-mouth clouds.
For best results, measure with a kitchen scale whenever possible or scoop the flour into your measuring cup and level it flat.
We also recommend sticking with regular all purpose flour. No need to splurge on cake flour!
7. Work ahead.
Although you can make your cookie dough and bake the same day, the flavor really changes if you bake the next day. Let the dough cool in the fridge to firm and for the flavors to mingle together.
You can also use a cookie scoop to portion out the cookies, then freeze them on a cookie sheet lined with parchment paper. Transfer the cookie pucks to a freezer-safe airtight container and store for up to 3 months. Thaw in the fridge and bake like normal.
