Moist and Tart Lemon Curd Cake

This lemon curd cake has a super-soft texture and is full of a strong tart lemon flavor.  It's a popular recipe from the former Amycakes Bakery.

Whisk together all the lemon cake's dry ingredients in a mixing bowl. Whisk the wet ingredients in a separate bowl.

Combine the wet and dry ingredients in a large bowl. Whisk in the lemon juice and then the melted salted butter.  Pour the batter into prepared baking pan(s) and bake.

Make the tart lemon curd filling using instant clearjel, fresh lemon juice, lemon zest, egg yolks, and butter.

Assemble the lemon curd layer cake by filling each cake layer with lemon filling.
